Onion Uttappam

I am back with a breakfast delicacy today.I have been loving south Indian breakfast since childhood.
Its easy to make, super yummy to have and sufficiently healhty as well.Onion uttappam is enhanced version of dosa.The only difference between dosa and uttappam is that we make uttappam's batter a little coarse compared to that of dosa.This can also be given to kids in their tiffin boxes as it is quite filling and healthy.Do try the below recipe and let me know your comments and doubts!
Ingredients:
3 cups-Rice
1 cup-urad daal(Black gram lentils)
2- Onion(finlely chopped in square shape)
2- Green chillies
1 cup-Fresh coriander
1 stpn-Baking soda
Salt as per taste.
Oil to cook.
Method:
- Soak the rice and urad daal in separate utensil for 6 to 7 hrs.
- Grind the rice first in a mixer by adding 1 cup of water into a smooth paste.
- Now, grind the urad daal with 1 cup of same water in which it was soaked till it becomes a smooth coarse paste and add this to the rice paste.
- Mix the mixture well to form a proper consistency neither too thick to move nor too thin to flow away easily.
- Add 1 tspn baking soda to the mixture and keep the batter aside covered for overninght.
- The next day add onions,coriander,green chillies and salt to the batter.Mix well.
- Heat a non stick pan well.
- Take a round shaped and deep spoon as shown in below picture:
- Take ample of the uttappam mixture in the spoon and spread it round on the hot pan as shown below:
- Keep spreading the batter only in one direction to form a perfect circle.
- Now, add 1 tspn oil on the the uttappam so the oil cooks it well from both sides.
- Flip the uttappam after it becomes golden brown and crisp as shown below:
- Cook the other side for 2 minutes and your onion uttappam is ready.
Serve it either with coconut chutney or tomato ketchup and enjoy your breakfast!
