Restaurant Style Veg Fried Rice.

After a long break, I have come back again with one of the most popular recipes Veg Fried Rice I recently tried making at home and it turned out to be quite similar to that we get in restaurants.I did not need some extraordinary ingredients to make it taste good, just basic Chinese sauces and veggies are more than enough!The formula is to cook the vegetables and rice on a high flame.Do avoid using the Chinese salt named Ajinomoto as it is not very healthy.So do try the recipe below and follow the steps as it is if you want it right.
Ingredients:
200 gms- Long grained rice(You can use basmati rice as well)
2 tspn- finely chopped garlic and ginger each
1 tspn- Ginger garlic paste.
1 cup - Finely chopped capsicum, carrot,cabbage,spring onions,green peas each
1 tspn- Black pepper powder
2 tspn- Red Chilli Sauce
1 tspn- Soya sauce
1 tspn- Vinegar
Salt as per taste( Sauces already have salt so be careful while adding salt separately).
Method:
- Boil the rice until its 80% cooked. Make sure you don't cook the rice completely.
- Drain the water from rice by placing the boiled rice in a strainer.
- Add 2 tspn of oil in the rice and mix in the rice carefully so that the rice grains doesn't break.Let the rice cool so that the grains stand separately from each other.
- Now take a kadai( a deep broad vessel) and add oil in it.
- Add finely chopped ginger and garlic in the hot oil and fry it until a little golden.
- Add ginger garlic paste,black pepper powder and all the veggies and cook on a high flame till the vegetables turn crispy.
- Add salt and rice.Mix well.
- At last add red chilli sauce, soya sauce and vinegar. Mix well.
- Stir the rice on a high flame for 5 to 10 minutes
- Your veg fried rice is ready.Serve it hot as it is or with schezwan sauce.
