Yakhni Pulao
Hello All,
This special recipe of Yakhni Pulao has an exclusive traditional background & taste.It's honest to taste & traditions both! The enigmatic aroma & flavor of garlic makes this simple dish, simply irresistible.I have been making yakhni pulao once a week but mostly people make it on special occasions. It can be served with salad or raita and papad.
Do try the below recipe because its really very delicious.
Ingredients:
1/2 kg- Chicken
1/2 kg- Rice
3 -Onions finely chopped.
1 cup-Curd
3-Potatoes(cut into halves)
5- Cardamom
5 to 6 -Cloves
2- Cinnamon stick
4 to 5- Black pepper
1 tspn -Cumin seeds
2 tspn -Coriander
2 to 3- Bari Elaichi(Black color cardamom)
1 tspn -Saunf powder
2 tspn -Ginger garlic paste
2- Bay leaves
Method:
- Fry the finely chopped onions until light golden.
- Add all the whole garam masala(Cardamom,cloves,black pepper,cumin seeds,coriander seeds,bari elaichi,cinnamon stick and bay leaves).Mix well and let it cook on low flame for two minutes.
- Now,add ginger garlic paste and slit green chillies and let it cook for 2 minutes.
- Add potato, chicken and curd.Mix well and cover the mixture with lid.Let the mixture cook until chicken and potatoes are 50% cooked and oil separates from the mixture as shown below.The curry which you see is called 'Yakhni".
- Now add the washed rice in the mixture and mix everything well.
- Add saunf powder to the mixture and mix well.
- Cover with lid and let the pulao cook until rice is cooked.
- Do not try stirring the pulao after the rice is cooked.
- Garnish with fried onions and hot aromatic yakhni pulao is ready to be served.
