Arabic delicacy-Chicken Shawarma

Hello All,

People from Arab mostly prefer eating food which is quite low on spices and easy on palette which is completely contradictory to the food habits of we Indians.But, this dish is something which I cant live without eating!Its called Shawarma.
Shawarma is a popular Arab dish that is prepared by grilling meat on a spit. ... To make the meat tender and keep it juicy I use yogurt in this chicken shawarma recipe as I do it other way which is easy,quick and equally delicious to eat.Do try the below recipe and let me know your comments..






Ingredients:-

For chicken shawarma
1/2 kg-Boneless chicken cut into small pieces.
5 cup-All Purpose flour
2 tspn-Corn flour
5 to 6-Lettuce leaves
1 cup-Curd or Yogurt
2 -Potatoes for French fries(can be replaced by plain potato chips) 
2-chopped tomatoes
1 tspn-Cumin powder
1 tspn-Red chilli powder
1 tspn-Coriander powder
1 tspn-Tandoori masala(I use Everest Tandoori masala)
4 tspn-Olive Oil
Salt as per taste

For Tahini Sauce:

4 tspns-Sesame seeds
1 cup-Curd or Yogurt
1 piece-Ginger and Garlic each
1 tspn-Lemon juice
1 tspn-Olive Oil
2 tspn-Water
Salt as per taste.

Method for Tahini Sauce:

Grind all the ingredients mentioned above in mixer to form a thick and smooth paste as shown below:


Try not to use water while grinding as it spoils the consistency of sauce and it tastes best when it is thick.

Method for chicken Shawarma:



  • Firstly, marinate the boneless chickn pieces with curd,cumin and red chilli powder,coriander powder,tandoori masala,ginger-garlic paste and salt for 1 hour.
  • Next, we need to make the wraps out of the all purpose flour.So make the dough using the flour,a pinch of salt and water as required.
  • Roll out small sized round wraps which are neither too thick nor too thin.



  • Cook the wraps on a tawa or directly on a low flame burner and it should look as shown below.The wraps are ready now.







  • Next, we need to cook the marinated chicken in the olive oil on a low flame.Cook it until it turns light brown and soft with all the marination curry binded to chicken pieces.
  • Prepare the french fries just by chopping potatoes in desired shape. For french fries, marinate the chopped potato with cornflour,all purpose flour and salt,fry it directly in hot oil until its crispy.The french fries can simply be replaced by potato chips to add a crisp to your shawarma.
  • The next step is to put the tahini sauce,cooked chicken,french fries and lettuce leaves in wraps.Place the wrap on the kitchen board,apply tahini sauce(use a good amount of sauce as it gives the arabic flavor to your shawarma),places pieces of chicken over the sauce in middle of the wrap vertically,put the lettuce leave(cleaned and cut) and tomatoes over the chicken pieces and wrap off the rolls.
  • I prefer wrapping the rolls in tissue paper or foil paper at last so that the material doesn't come out from other side of the shawarma rolls.
