Authentic PASTA

People around the world have been fan of Pastas. But, it has hardly gone to every Indian kitchen yet,though the new generation loves it,our grandmas wonder how we eat it(My grandma never liked it until I made it the following way😋).

Pasta is made in three sauces:white,red and green sauce(white is my favourite!!)
Pasta is available in various shapes.I prefer using shells for white sauce,penne for red and green sauce.
Note:Boil some water and put the pasta in the boiling water on a low flame with some salt and cook it for 5 or even less minutes until its semi cooked.
Pasta In Red Sauce (Penne Arritaba)
Ingredients-
3 Cups – Boiled Penne Pasta
1.5 Cups – Tomato Concasse(blanched tomato)
2 Tbsn – Virgin Olive Oil
6 – Black Olives
½ Tsp - Red Chilli Flakes
Salt To Taste
6-8 – Chopped Garlic
4-5 – Fresh
Basil Leaves
Method-
Heat Olive Oil in a non-stick pan, add
garlic & sauté lightly.
Add tomato concasse, mix well and cook
for one to two minutes.
Add Penne and salt and toss well.
Add half teaspoon red chilli flakes and
mix well.
Slice Black Olives and tear basil
leaves, reserve some of them for garnishing and rest to the pasta and toss
again.
Serve hot
garnishing with remaining red chilli flakes, basil leaves and olives.
Pasta In White Sauce
Ingredients-
250 gms – Boiled penne/shell pasta
1 ½ Cups – White Sauce (Butter + floor +
milk)
2 Tsp – Butter
1 Tsp – Chopped Garlic
¼ Cup – Diced Yellow Bell Pepper
¼ Cup
– Diced Green Bell Pepper
¼ Cup – Diced Red Bell Pepper
1 Tsp – Dried Herbs
Salt to Taste
1 Tsp – Chopped Parsley
1 Tsp- Crushed Peppercorns
Method-
Heat white sauce in a non-stick pan
until it comes to a boil.
Heat butter in another non-stick pan.
Add garlic and sauté lightly.
Add yellow/Green & Red Bell peppers
, herbs, pasta and salt. Mix well.
Add cooked pasta mixture to the white
sauce and mix well.
Add 1 tsp chopped parsley, mix well and
bring to a boil.
Add crushed peppercorns.
Serve Hot
Pesto Pasta (Green Pasta)
Ingredients-
For the pesto
A large bowl fresh basil leaves
7-8 garlic pods
1 cup olive oil
Half cup cashew nuts / Pine nuts
1/4th cup Parmesan cheese
Cracked pepper to taste
Salt to taste

Method
- In a bowl add fresh basil leaves, cashew nuts, garlic pods, Parmesan cheese, salt and black pepper and add olive oil and mix it all well
- In a pan full of water add salt, pasta and let it boil for 10 minutes
- In a grinder, blend the mixed ingredients to run into fine smooth paste add some olive oil
- Transfer it into another bowl
- In a pan add some oil, cherry tomatoes and boiled pasta and some salted water and add the pesto sauce.
- Add some basil leaves and the pesto pasta is ready to be served!
- In a bowl add fresh basil leaves, cashew nuts, garlic pods, Parmesan cheese, salt and black pepper and add olive oil and mix it all well
