Moghlai Special-Chicken Dum Biryani

Today my post is due to public demand😉(I mean my followers has asked me to post this recipe as soon as possible) and its non other than the authentic Muslim chicken dum biryani recipe😋

Biryani is an evergreen classic that really needs no introduction. India offers so much on its culinary platter but the one dish Indians unanimously love indulging in is the mouth-watering biryani. With local and hyper local variations having evolved into distinctive styles of biryanis, one is spoilt for options when it comes to experiencing this melting pot of flavors.
So if you are a die-hard fan of this delicious dish, take things up a notch and tease your taste buds a little more with the below recipe I use it to make at home.Do try and let me know the comments..


Ingredients:-
1 kg-Chicken(preferably with bones)
1 tspn-Vinegar
1 kg-Basmati Rice(semi cooked)
3 tbspn-Oil
2 cups-Curd or Yogurt
3-Saffron Strands
1 tspn-Mace(Japatri) and nutmeg powder
3-Potatoes
6-large sized onions
2-Tomatoes
3 pieces- Each of cloves,cardamom,black pepper,star anise and Cinnamon.
2-Bay leaves 
4 to 5-Green Chillies
2 tspn-Ginger Garlic paste
2 tspn-Cumin powder
2 tspn-Red chilli powder
2 tspn-Roasted coriander seeds powder.
1 tspn-Garam masala powder
2 cups-Fresh Coriander 
2 cups-Fresh mint leaves

Method:
Wash and soak the basmati rice.
On the other hand,wash the chicken thoroughly to remove the blood completely and soak the washed chicken in water and vinegar in a bowl.Let it rest for 5 minutes.Wash the chicken after 5 minutes and place it over a drainer to remove water.
Fry finely sliced onions until light brown and crispy as shown in a photo below.Fry potatoes after onions are fried in the same oil.


Make a paste of green chillies and tomatoes.
Marinate the chicken with curd,Ginger Garlic paste,green chilli and tomato paste,Cumin powder,Red chilli powder,Mace(Japatri) and nutmeg powder,Roasted coriander seeds powder,Garam masala powder and fired onions at least for half an hour
Cook the rice until it is 50% cooked.While cooking the rice,add the mixture of milk and saffron strands and stir it with rice once.
Take a vessel large enough to fit the rice and chicken.Add oil(you can use the same oil you used for frying onions and potatoes) to the vessel and let it heat on a low flame for 2 minutes.
Add the dry spices cloves,cardamom,black pepper,star anise,cinnamon and bay leaves,add ginger garlic paste to the vessel and let the mixture cook for 2 minutes.
Add the marinated chicken,chopped coriander,mint leaves and fried potatoes,mix the mixture well.Cook it until oil starts separating from the mixture.
Now,place the cooked rice over the cooked chicken in the vessel until fully covered and cover the lid.Place the vessel on low flame and let it cook for 20 minutes without opening the lid.
after 20 minutes,check if the rice is fully cooked or not.
Garnish the top of vessel with some fried onion and mint leaves, your biryani is ready to relish upon..
Serve it with Boondi Raita or Salad.

Note:-Do not mix the white rice and the spicy chicken masala rice while serving from the vessel as it spoils the taste.
