Method:-
  • Wash the chicken kheema with water and dip it in vinegar for 10 minutes.Wash it again and strain it properly so that the minced chicken doesnt feel moist.
  • Now, fry the finely chopped onions on a pan using two tspn of oil until it turns light brown.
  • Add the minced chicken, mint and coriander leaves, fried onions, red chilli powder, coriander powder, turmeric powder,Cumin powder,Garam masala powder, bread and curd in a big jar of mixer(I use my atta kneader with its chopper attachment).Grind all things together to make a coarse mixture which is not very moist as it wont be binded.

  • Make the seekh kebab in long shapes as shown in the picture and shallow fry in a pan from all sides until its light brown and fully cooked.
  • Now,a very important step is to give it coal smoke. For that, place the seekhs in a big bowl, light a coal on your gas stove and place it on a small plate.Put this plate in your bowl of seekhs and add ghee on the lit coal and cover the bowl immediately.Remove the cover after 3 minutes and you will get an amazing aroma and taste of coal's smoke in the seekhs.
  • Garnish it with some mint leaves and onion rings.

Serve it with hot lachha parathas and be ready to get praises!!
